Ingredients
- 1 KG Fresh Chicken
- 500 gram Rice (Raw)
- 250 gram Onion
- 200 gram Ghee
- 1 inch Ginger
- 2 Spoons Coriander
- 1 Spoon black pepper
- 5 to 6 Red Chillies
- 4 Bay Leafs
- 2 Spoons Fennel Seeds
- 4 Cardamoms
- 2 or 3 pieces Cinnamon
- 1/2 Cup Fresh Curd
- 1 Spoon Turmeric Powder
- 10 to 12 Cashew
- 20 to 25 Kismis
- Salt as Required
Steps to prepare Chicken Pulao Recipe
Wash the rice well and keep it in a dry place. Take 50% of Fennel Seeds, 50% of Cardamoms, 50% of Cinnamon, Coriander, Red Chillies and Ginger. Grind all them well in Mixer. Chopped Onion and keep it in a plate.
Switch on Gas. Put a Pan. Start frying Cashew with 100 gram (1/2) Ghee. Fry until the upper surface of Cashews looks little brown. Then keep all fried Cashews in a plate. Now start frying chopped Onions. When the chopped Onions will look reddish keep 1/2 of the fried Onions in a plate. Then with the rest of fried Onions add Chicken, Masala (Mixer of 50% of Fennel Seeds, 50% of Cardamoms, 50% of Cinnamon, Coriander, Red Chillies and Ginger), Curd, Salt and Turmeric powder as required. Then keep frying. After some 20 to 25 minutes add 1/2 glass of water to the fried Chicken. Keep remember this recipe is a gravy recipe. So add water accordingly.
In an another pan put rest 100 gram Ghee. Start frying Bay Leafs, black pepper, Cardamoms, Cinnamon and Rice together. Fry it for 10 to 15 minutes. Then keep fried rices in a plate.
Take one more pan. Then as the first layer keep 20% rice. In second layer above the rice add fried chopped onions and Fennel Seeds. Then put fried Chicken as the third layer. In 4th layer add the rest of rice, cashew and kismis. Now add 1 cup of water and start cooking. Keep remember never over cook the rice. Near after 10 to 15 minutes switch of the gas and keep some burning charcoal above the closed bowl. This process helps to cook the rice well.
Using the above Steps your Chicken Pulao Recipe is ready. Serve it with Curd, Cucumber plus Onion Salad.
