Pickles are salty, spicy or sour in taste. Women are more fan to variety of Pickles. In northern India pickles are famous as ACHAR. Pickles are mainly made from Mango, Lime, Amla, Chilli, Orange Cover, Ginger. Vegetables such as egg plants, carrots, cauliflower, tomato, bitter gourd, ginger, garlic, onion & citron are also occasionally used in Pickles. Homemade Mango Pickles Recipe

Ingredients

  • 3 kg Mango
  • JIRA Powder
  • Red Chilly
  • AMCHUR Powder
  • Turmeric Powder
  • Salt as required
  • METHI & JUANI
  • Mustard Oil
  • Vinegar

Wash all raw mangoes well. Cut it into small pieces. Mix Turmeric Powder & Salt as required. Keep this mixed mango pieces in hard Sun ray until the green mangoes looks dry & yellow. Now take JIRA, METHI, RED Chilly & JUANI mix in a mixer in shape of Powder. Add this powder to dry mango pieces. Put some AMCHUR powder and mix all properly. Keep this in hard Sun ray for 2 to 3 hours. Later add Mustard oil as required. Keep in hard Sun rays. Finally add a little vinegar & your homemade mango pickles are ready. Serve it to your friends & family.

Homemade Sweet lemon Pickles Recipe

Ingredients

  • 20 lemons
  • JIRA Powder
  • Red Chilly
  • Turmeric Powder
  • Salt as required
  • METHI & JUANI
  • Mustard Oil
  • Vinegar
  • Sugar

Cut the lemon in such a way that it will look like a 4 pieces flower. Don’t cut the lemon into 4 different pieces. When all lemons are cutted properly, put these lemons into boiled water. Add salt & turmeric powder. Boil it for 10 to 15 minutes. Bring the lemons into a wide pot and keep it in hard Sun ray until it get dry. Now take JIRA, METHI, RED Chilly & JUANI mix in a mixer in shape of Powder. Add this powder to dry lemon pieces. Grind Sugar, make sugar powder. Mix sugar powder in lemons. Keep this mixer in hard Sun rays. After 2 to 3 days add Mustard Oil as required. Keep again in hard Sun rays for a better taste. To keep your lemon pickles more long days add some little vinegar.

Chilly Pickles Recipe

Ingredients

  • Green Chilly
  • Salt as required
  • Turmeric Powder
  • JIRA
  • Mustard Oil
  • Mustard Seeds
  • Chilly Powder
  • Few Lemons

Cut Chillies from one side. Chilly will look like V shape. Mix Salt, Turmeric powder & lemon juice to cutted Chillies. Keep it in hard Sun rays until the lemon juice get dry. Mix Mustard seeds & jira like a powder and add this to dry Chillies. Now add mustard oil to the masala Chillies and keep it in Sun rays for 10 to 12 days.

Homemade Mixed Pickles

Ingredients

  • Mango, Lemons, Carrots, Amla, Green Chilly
  • Mustard Seeds
  • Mustard Oil
  • JIRA
  • Turmeric Powder
  • Salt as required
  • Chilly Powder
  • Vinegar

Cut Mango, Lemons, Carrots, Amla into small pieces. Cut Green Chillies half from a side like V view. Mix turmeric powder & salt as required and keep it in hard sun rays for 7 to 8 days. Now take JIRA & Mustard seeds in a mixer mix it to a gravy look. Mix this masala with cutted mangoes, lemons, carrots, amla, green chilly pieces. Mix it well. Add mustard oil as required. Keep it in hard sun rays until the cutted pieces get soft to eat. Add 2 to 3 spoon vinegar & your Mixed homemade pickles are ready.

Berry Pickles

Ingredients

  • Berry
  • Salt as required
  • IMLY
  • Sugar
  • JIRA
  • Red Chillies
  • METHI
  • JUANI
  • Mustard Oil

Mix turmeric powder & salt to Berries and keep it in sun rays until it get dry with dark brown looks. Now put IMLY in water to make a juice. Switch on the gas. Put kadai and add IMLY juice to boil. Few times later add sugar to boiled IMLY juice. When it will look heavy add this semi-paste to dry Berries. Keep in hard sun rays for 2 to 3 days. Then mix METHI, JIRA, JUANI, RED CHILLIES to a powder. Mix this powder with gravy masala Berries. Keep in hard sun rays for 2 to 3 days. Now add some sugar on the top of berry pickles. Put mustard oil over sugars. Keep in hard sun rays for 6 to 7 days. When you feel berries taste soft, add 2 to 3 spoon vinegar to your homemade Berry pickle recipe.
